Espresso Stout Waffles

Some (ALL) weekends need to end with a Sunday Stall.

Sunday Stall /ˈsəndā,ˈsəndē/ /stôl/
noun – the process of drinking, starting at “brunch” to make Sunday drag on as long as possible, to prolong the Monday from ever coming.

What better way to start a Sunday Stall than with an Espresso Stout?

Espresso. Stout Beer. COMBINED.

Too early to enjoy a beautiful stout? Why not add it to your waffles instead.

ESPRESSO STOUT WAFFLES

2 1/3 c Whole Wheat Flour
1 c Unbleached Flour
1 c Old Fashioned Oats
2 tsp Baking Powder
2 tsp Baking Soda
1 tsp Salt
2 Eggs
1 Banana
1 Stick Butter, melted
1 12oz Espresso Stout Beer (1 1/2 c)
1/2 c Almond Milk
1/4 c Walnut Oil
1/4 c Greek Yogurt

Add ins: (i did all of them)
1 c Pecans, chopped
1 Handful of Chocolate Chips
1 Handful Unsweetned Coconut Flakes
2 TBS Vanilla Rum Extract

Step one: Mix all the dry ingredients together.
Step two: DO NOT MIX THE BEER AND MILK TOGETHER. I did. Shit. It curdled immediately.
Alternatively, whisk eggs and melted butter, vanilla, mashed banana and yogurt together.
Step three: add wet mixture to flour and then slowly mix in beer.
Step four: fold in add-ins of coconut, chips and nuts.

Waffles are great because you can pause at any point to steal a swig or a kiss without screwing up the process. Happy Sunday Stallin’ waffle makin’.
