Sometimes after binging on random episodes of Netflix originals or random movies, I can’t sit any longer and my idle hands need to create. Sometimes it’s knitting and most times it’s cookies. But today, after wanting ice cream and bananas but having a random pineapple that needed to be used, I decided a cake was going to happen…

Piña Colada Cake

2 Bananas
1/2 Pineapple
1/4 c Soy Milk
Splash of Vanilla

1 1/2 c Whole Wheat Pastry Flour
1/2 c Coconut Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/4 tsp Fresh Nutmeg
1 stick Butter
2 Eggs

Coconut Cream Cheese Frosting
1 pkg Cream Cheese
3 TBS Coconut oil
1 c Confectioners Sugar
Handful of Unsweetened Shredded Coconut (Bob’s Red Mill rocks)

– Preheat oven to 350 degrees.
– Toss the fruit, soymilk and vanilla in a food processor until smooth.
– Whip the butter and sugar until fluffy.
– Meanwhile, in a separate bowl, mix flours, powder, soda, nutmeg and salt together.
– Add in eggs to sugar whip.
– Mix in flour mixture to whipped sugars.
– Mix in banana mixture.
– Spray 9×13 inch pan with coconut oil and bake mixture for 30 minutes.
– Whip all frosting ingredients together until smooth.

– Cake will come out flat. coconut flour doesn’t rise. This is perfect. Cut the cooled cake in half and lather the middle and top with your frosting.

Garnish with coconut if you are into that. Toast it! Damn, wish I would have thought of that while making it.
